Chocolate Nut Butter Chia Pudding

My neighbor-friend, Ann, recently wrote about chia seeds on her blog: naturallyglutenfree.blogspot.com. She listed several recipes including a variation of this chia seed pudding. The first time I tried it, I hated it. It had a completely disgusting texture and this is from a gal who has no problem with the texture of raw oysters. The key, use a powerful blender and/or grind the seeds in a coffee grinder first. Plus I cut the amount of chia seeds in half from the original recipe. It still has a bit of a slimy feel, so this recipe is for the chia seed enthusiast.

Ingredients
1 cup whole milk
1 tablespoon chia seeds
2 tablespoons cocoa powder
1 tablespoon peanut or almond butter
1 teaspoon vanilla extract
2 tablespoons coconut sugar (or whatever you want for sweetness)
Dash of cayenne pepper and cinnamon (optional)

Method

Combine all ingredients in a blender. Blend until smooth. Let sit a few minutes to thicken.

Serves two.
