Grilled Pineapple Salsa

I invited a couple of friends over to help test the avocado margaritas. Amy and Yves (be sure to check out their  Goldbergs! Music blog here and Nite-Time News here) brought a delicious salsa to compliment the drinks. They gave their backyard-grown tomatoes a boost with grilled pineapple. Here’s their recipe:

5 cups chopped tomatoes
3-4 grilled pineapple sliced
1/2 Medium Spanish onion, chopped
2 scallions, chopped
2 jalapenos seeded and chopped (or more if you like it extra spicy)
1/2 cup cilantro, chopped
1/4 cup fresh lime juice
about two big pinches of salt or to taste
fresh ground pepper to taste

Grill the pineapple to get a nice char on it, then chop into small pieces. Chop the rest of the ingredients by hand and mix up in a big ol’ bowl. There’s a lot of room for adjustment with the lime and salt and pepper depending on how you like it.
